I have made birthday cakes many times before this event. If I have to be honest, I did not decide to make the cake myself immediately. At first, we asked ourselves what must be the form of the cake. And for the first year of our boy, we understood a few things that we could use. He likes dogs, balls, and bread a lot. Among the options, we decided that a dog cake would be a great idea, and we started our research.
Unfortunately, the market did not have a great variety of opportunities, and we did not like the prices. I cannot say the exact costs, but I can say one thing – the cost for the cake we made was at least three times cheaper than the market price for a similar product.
How to make a home fruit cake? Recipe for cake lovers!
For the fluffy crumb:
- 5 eggs
- 150 grams of sugar
- 150 grams of white flour
For the cream:
- 500 grams of Mascarpone cheese
- 800 grams of sour cream
- 150 grams of powdered sugar
For the cake and the decoration:
- 3-4 Bananas
- 300 grams of raspberries
- 300 grams of blueberries
- Dark / White couverture chocolate
- Coconut chips
First, you have to prepare the crumb. To do this, put 2 eggs in a bowl and mix them with the blender. You have to use the blender until you see small balloons on the top. Check the picture for reference.
After that, start gradually adding the sugar while still mixing with the blender. The mixture will begin to whiten and grow up. It is crucial to use the highest speed of the blender for this procedure. The bigger the mixture grows, the bigger the crumb will be. We will not use baking powder or another similar product in the ingredients.
You have to mix the eggs and the sugar until you stop feeling the sugar when you touch it with your fingers.
Take another bowl and sift the flour inside it. You have to sift all of it.
Start adding the flour very slowly in the main bowl where the eggs are. You have to be very slow at this process. While you add the flour, you have to mix with a spoon or some accessory like the one I used. You have to make circular motions from bottom to top.
After that, prepare your baking tray by putting baking paper on the bottom of it. When you are ready, move the big mixture from the bowl into the baking tray. Add it into the oven and cook 40 minutes at 180 degrees Celsius and do not open the oven while baking.
You can check if it is ready by using a wooden toothpick. Stick it inside and check if the toothpick is dry. If it is dry, you are ready to go on.
After taking it out of the oven, remove the outside ring and leave it outside to cool. When the temperature equals the room temperature, you can cover the baked mixture with foil. Leave it covered 60 minutes and cut in three equal parts.
You can prepare the cream while the foil is covering the baked mixture. To make the cream, take a bowl, put the Mascarpone and the sour cream inside it, and mix with a blender. Gradually, while mixing, add the powdered sugar.
When the 60 minutes pass, you will have to smear the baked layers with cream. Start with the first layer. Spread some cream over it, add bananas and raspberries.
After that, put the second baked layer over the first, on the top of the fruits. Then get some of the cream and spread it on the top of the second one.
Again, put some bananas and get blueberries this time. You can use raspberries for the first and the third layers and blueberries for the second as I did.
The next step is putting the third baked layer over the second. Spread the rest of the cream over the third layer and on the side of the whole cake.
Cover the side of the cake with the coconut chips.
After that, add the chocolate. You can use white or dark and in a shape that you would like. Use your imagination here.
At the end add the rest of the fruits on the top together with some additional chocolate and coconut chips at the top if you want.
In order to create liquid chocolate out of the hard couverture, you must put it in an iron bowl and let it float in a bigger bowl or a pot full of water. The chocolate does not have to be cooked directly in the oven because it will burn. You have to heat the bigger pot with water while stirring the chocolate only. You do not have to add water to the chocolate. It has to be used only for the warming of the smaller bowl, full of chocolate.
Time for cooking: Around 2 hours
Our guests and we liked it very much. It was light and delightful. That is the reason why we decided to cook it again for the second party. After we finished with the cake, we had too much of the cream left. That is why we made a few cups of this fruits dessert.
